Delicious Easter Bread Recipe: Step-by-Step Preparation
Easter bread, known as 'paska,' is not just a traditional pastry but a true symbol of Easter. Its fluffy, aromatic, and fibrous structure makes it a beloved dish on the festive table.

Before you begin, it is essential to soak the raisins or candied fruits in advance. This will allow them to become juicier and more aromatic. To do this, take a small amount of water, add sugar and yeast, and let this mixture activate for 10-15 minutes. After that, add flour and allow the dough to rise. When the yeast has increased in volume by 2-3 times, you can move on to the next step.
In the next step, we introduce butter, sugar, and eggs into the activated mixture. Mix everything well to combine the ingredients. Then, cover the dough and let it rise for 2-3 hours in a warm place. Alternatively, you can leave the dough overnight under plastic wrap in the refrigerator, which will add even more depth to the flavor.
Once the dough has risen, mix it again and add 360 grams of flour. If desired, you can add up to 380-390 grams, but no more. It is best to knead the dough in a mixer, although you can do it by hand, but this will take more time. Knead the dough until it becomes firm, elastic, and no longer sticks to your hands.
After that, transfer the dough to a bowl and let it rise again for 2 hours in a warm place, covered with plastic wrap. You can use an oven preheated to 30 degrees Celsius for this. The dough should increase in volume by 2.5 times. When this happens, punch down the dough on the table, adding a little oil. Then divide it into three parts.
In each part, add raisins, fold the dough, and place it in 13 cm diameter paper molds that have been greased with oil. Let them rise three more times. For additional decoration, you can make a cross-cut on top and place a piece of butter, or create a macaroon topping, or leave the paska under glaze.
Once all the preparatory steps are complete, place the molds with the dough in a preheated oven at 175-180 degrees Celsius in convection mode for 10 minutes. After that, reduce the temperature to 155 degrees and bake for another 25-28 minutes. You can check the readiness of the paska with a toothpick: if it comes out dry, the baked goods are ready.
After baking, remove the paska from the oven and let them cool. Once they have cooled, you can decorate them with Swiss meringue. To do this, mix all the ingredients, heat them in a water bath, constantly whisking until reaching 60 degrees Celsius, and then whip until cool.
